Huevos Rancheros

Mexican food for breakfast? Yes please! This is my family’s version of authentic huevos rancheros, and it is simply divine. I could probably eat this every day, I love it that much.

My mother’s first husband was Mexican. She was lucky enough to learn all sorts of recipes from his grandmother. She was then gracious enough to teach them to me many years later.

My pictures do not do this dish justice, it is truly amazing. Even better, it’s pretty simple too. Try it, you’ll thank me later.

Huevos Rancheros
Huevos rancheros, simply means "ranch eggs". This breakfast dish is relatively easy to make, but it will take your food game to whole new level.

Instructions
  1. Pan fry the corn tortilla using pan-spray, a splash of oil or dab of butter. You just want to sear the tortilla a bit, do not make it crunchy
  2. Spread (heated) refried beans in an even layer on one side of the tortilla. Set aside in warm oven or in microwave
  3. Put salsa in small pan and crack eggs on top, careful not to break yolks
  4. Sprinkle with salt and pepper. Cover with a lid and cook until egg whites are done.
  5. Sprinkle cheese on top, return lid and cook just until cheese is melted.
  6. With the help of a spatula, slide egg and salsa out of the pan on top of the refried beans and tortilla
  7. Garnish with any combination of avocado, sour cream, green onions or cilantro
